
Shrimp Omelette with Spinach, Red Bell Peppers & Mozzarella Cheese
Ingredients-
- 2 large Eggs
- Salt
- Black Pepper
- Garlic Powder
- Ground Paprika
- Red Pepper Flakes
- 5 large Spinach Leaves, chopped
- 4 or 5 medium size Shrimp, peeled and deveined
- OEVOO (Organic Extra Virgin Olive Oil)
- 1/3 c Shredded Mozzarella Cheese
- Few Parsley Leaves, chopped for garnish
Directions-
- Season the shrimp with a dash of salt, pepper, garlic, paprika and red pepper flakes. Sauté in oevoo for 5-7 minutes over medium-high heat. Transfer the shrimp to a plate.
- In the same pan, sauté the spinach for a couple minutes. Transfer to a plate.
- Turn the burner down to medium low heat. In a small bowl, whisk the eggs and season with a dash of salt and pepper. Coat the same saucepan with butter. Pour in the eggs. Cook for a couple minutes, covered, and add the cheese and spinach.
- Remove from heat and top with the shrimp and fresh chopped parsley.
