Shrimp Omelette with Spinach, Red Bell Peppers & Mozzarella Cheese

Ingredients-

  • 2 large Eggs
  • Salt
  • Black Pepper
  • Garlic Powder
  • Ground Paprika
  • Red Pepper Flakes
  • 5 large Spinach Leaves, chopped
  • 4 or 5 medium size Shrimp, peeled and deveined
  • OEVOO (Organic Extra Virgin Olive Oil)
  • 1/3 c Shredded Mozzarella Cheese
  • Few Parsley Leaves, chopped for garnish

Directions-

  1. Season the shrimp with a dash of salt, pepper, garlic, paprika and red pepper flakes. Sauté in oevoo for 5-7 minutes over medium-high heat. Transfer the shrimp to a plate.
  2. In the same pan, sauté the spinach for a couple minutes. Transfer to a plate.
  3. Turn the burner down to medium low heat. In a small bowl, whisk the eggs and season with a dash of salt and pepper. Coat the same saucepan with butter. Pour in the eggs. Cook for a couple minutes, covered, and add the cheese and spinach.
  4. Remove from heat and top with the shrimp and fresh chopped parsley.
