
Ingredients-
- 3 Large Eggs
- 5 Cherry Tomatoes, sliced in half
- 2 tbsp Chopped Bacon
- 1/5 c Shredded Mozzarella or Cheddar Cheese
- Few Baby Bella Mushrooms, thinly sliced
- Few large Spinach Leaves, chopped
- 1 stalk of Green Onion, chopped
Directions-
- In a bowl, whisk the eggs together. Season with a dash of salt and pepper.
- Sauté the spinach, mushrooms and a dash of green onion for a few minutes in oil or butter.
- Coat a saucepan with butter. Add the bacon pieces and a few sliced tomatoes and chives to the pan. Pour the eggs into the pan.
- After a few minutes, add the mushrooms, spinach, a few more tomatoes, green onions, bacon and the cheese. Use a spatula to close the omelette. Flip over to cook for a couple for minutes.
- Garnish with green onions. (I served it with raspberries).
