Baked Tilapia with Tomato, Herb & Corn Relish & Collard Greens with Garlic & Vidalia Onion
Ingredients-
6 Tilapia Filets
Salt
Black Pepper
2 Garlic Cloves, minced
Flat Leaf Parsley
Ground Paprika
3 tbsp Butter
Directions-
Season each filet with salt, pepper, minced garlic, chopped parsley and ground paprika. Lay the filets in a baking dish. Add half a tbsp of butter over each one. Cover the dish with foil and bake for 25 minutes at 375°.
Collard Greens
Ingredients-
2 bundles fresh Collard Greens
Chicken Broth
1 Vidalia Onion
Salt
Black Pepper
1 large Garlic Clove, minced
Apple Cider Vinegar
Pinch of sugar
Directions-
Thoroughly rinse the greens and chop. In a large pot, bring chicken broth to a boil (enough to cover the greens), add the greens with 1 chopped vidalia onion, salt, black pepper and 1 large garlic clove (minced). Simmer for several hours and add a dash of apple cider vinegar. Add a dash of sugar, if bitter.
Tomato, Herb & Corn Relish
Ingredients-
3 Ears of Corn
Handful of cherry tomatoes, sliced in half
1 tbsp Butter
Salt
Black Pepper
Flat Leaf Parsley
Fresh Basil
Directions-
Rinse and shuck 3 ears of fresh corn. Add the kernals to a baking dish with salt, black pepper, 1 tbsp butter, fresh chopped parsley and fresh chopped basil. Roast for 20 minutes at 400°. Mix with sliced cherry tomatoes.
